Lorraine’s Corn Chowder

  • Ingre­di­ents
  • 3–5 Yukon Gold potatoes
  • 1 small onion
  • 1 can creamed corn
  • 1 can evap­o­rat­ed milk
  • 3 strips thick cut bacon
  • 1 tbsp. butter
  • Salt and pep­per to taste

Directions

Saute onion and bacon until the onion is yellow.

Peel and dice pota­toes. Put them in a large saucepan and add just enough water to cov­er the potatoes.

Add bacon and onion. Heat to a boil, then reduce heat to a sim­mer until pota­toes are part­ly cooked. 

Add corn, milk, and but­ter. Salt and pep­per to taste.

Heat through until the chow­der just starts to sim­mer, then serve.
