You’ll straight up murder these enchiladas! Try to wait till they cool off a little, though.
- ¡Ingredientes!
- 1⁄2 cup butter
- 1⁄2 cup all-purpose flour
- 2 cups chicken broth
- 1 cup sour cream
- 1 can chopped green chiles
- 1⁄2 cup Canola oil
- 1 chicken, cooked and deboned
- 1 medium onion, chopped
- 2 cups shredded cheese
- 12 tortillas
Preheat oven to 400°.
¡El Salsa!
Combine butter, flour and broth. Cook over medium heat until thick. Add chiles and sour cream.
About Those Options:
- If you’re using corn tortillas, soften them in hot oil.
- If you’re using flour tortillas, don’t.
¡El Enchiladas!
Fill the tortillas with chicken, onion and cheese.
Roll tortillas and place in 13” x 9” baking dishes.
Pour ¡El Salsa! over the tortillas and top with some more cheese.
Bake at 400° for 20 minutes.
