  • 1 tsp. ground cinnamon
  • 14 tsp. ground nutmeg
  • 2 tbsp. sugar
  • 4 tbsp. butter
  • 4 eggs
  • 14 cup milk
  • 12 tsp. vanil­la extract
  • 8 slices chal­lah, brioche, or white bread
  • Option­al: 12 cup maple syrup, warmed

Syrup Is Optional?

Yep. In fact, it’s option­al twice because

  1. Real maple syrup is insane­ly expen­sive, and while it pays in many cas­es not to skimp on ingre­di­ents, I don’t want to spend that kind of mon­ey on maple syrup, because
  2. I pre­fer straw­ber­ry jam on my French toast anyway.

Com­bine cin­na­mon, nut­meg, and sug­ar in a small bowl and set aside.

In a 10- or 12-inch skil­let, melt but­ter over medi­um heat. Remove from heat and whisk togeth­er cin­na­mon mix­ture, eggs and milk.

Add the vanil­la last, after mak­ing sure the sug­ar and spices are com­plete­ly dis­solved (it will make the sug­ar and cin­na­mon clot up otherwise).

Pour into a shal­low con­tain­er, such as a pie plate. Dip bread in egg mix­ture. Fry slices until gold­en brown, then flip to cook the oth­er side.

Serve with syrup or jam or what­e­vah ya likes.
