- Dry Ingredients:
- 1 1⁄2 cups all-purpose flour
- 3 1⁄2 tsp. baking powder
- 1 tsp. salt
- 1 tbsp. white sugar
- Wet Ingredients:
- 1 1⁄4 cups milk
- 1 egg
- 3 tbsp. butter
- 1⁄4 tsp.* cinnamon
- 1⁄4 tsp.* nutmeg
*I like cinnamon and I like nutmeg. But I love cinnamon and nutmeg together! I usually put a half teaspoon or more of each into this recipe, until the batter looks brown, like it’s made with wheat flour.
Whisk all the dry ingredients together, then add the milk and egg. Stir briefly and then add the melted butter.
Stir until the biggest lumps are mostly broken up: Like store-bought you don’t want to stir too long or you’ll end up with crêpes instead of pancakes.
