Superlative Pancakes

You know you’re eat­ing some ossim pan­cakes when you run out of superla­tives to describe them.

  • Dry Ingre­di­ents:
  • 1 12 cups all-pur­pose flour
  • 3 12 tsp. bak­ing powder
  • 1 tsp. salt
  • 1 tbsp. white sugar
  • Wet Ingre­di­ents:
  • 1 14 cups milk
  • 1 egg
  • 3 tbsp. butter
  • OPTIONS: 
  • 14 tsp.* cinnamon
  • 14 tsp.* nutmeg

*I like cin­na­mon and I like nut­meg. But I love cin­na­mon and nut­meg togeth­er! I usu­al­ly put a half tea­spoon or more of each into this recipe, until the bat­ter looks brown, like it’s made with wheat flour.

Whisk all the dry ingre­di­ents togeth­er, then add the milk and egg. Stir briefly and then add the melt­ed butter.

Stir until the biggest lumps are most­ly bro­ken up: Like store-bought you don’t want to stir too long or you’ll end up with crêpes instead of pancakes.
