Cheddar Pepper Muffins

Lit­tle-known fact: Al Gore could have stopped glob­al warm­ing with these muffins, but he just ate them all.

  • Ingre­di­ents:
  • 2 cups flour
  • 1 tbsp. sugar
  • 1 tbsp. bak­ing powder
  • 1 tsp. coars­ley cracked pepper
  • 12 tsp. salt
  • 1 14 cup milk
  • 14 cup veg­etable oil
  • 1 egg
  • 1 cup shred­ded sharp ched­dar cheese

Pre­heat oven to 400 °. Grease muf­fin tins.

In a large bowl, com­bine flour, sug­ar, bak­ing pow­der, pep­per, and salt. In a small bowl, com­bine oil, milk, egg until well blended.

Stir into flour mix­ture until just moist­ened. Fold in 34 cup of the cheese. Spoon into muf­fin tins.

Sprin­kle remain­ing cheese on top. Bake 15–20 min­utes or until done.

Let cool in pan on wire racks 5 min­utes. Remove from pan and serve warm.

Makes 12 muffins.
