One of the ultimate comfort foods.
- 1 1⁄2 sticks butter
- 1 1⁄2 cup sugar
- 1 1⁄2 tsp. baking powder
- 3⁄4 tsp. each:
- Baking soda
- 3 large eggs
- 2 cups (about 4 large) mashed bananas
- 3 cusp flour
- 1 1⁄2 cup (9 oz.) semisweet chocolate mini chips
- 3⁄4 cup chopped walnuts
Heat oven to 350 °. Coat inside of 5 mini loaf pans with nonstick spray.
Beat butter, sugar, baking powder, baking soda, and salt in a large bowl with a mixer on medium speed. Add eggs one at a time, beating until just blended. Best in bananas. Reduce speed, gradually add flour, beating until just blended. Stir in chips and nuts. Divide evenly among pans.
Bake 45–55 minutes or until done. Cool completely on wire racks.
