Chocolate Chip Banana Bread

One of the ulti­mate com­fort foods.

  • Ingre­di­ents:
  • 1 12 sticks but­ter
  • 1 12 cup sug­ar
  • 1 12 tsp. bak­ing pow­der
  • 34 tsp. each:
    • Bak­ing soda
    • Salt
  • 3 large eggs
  • 2 cups (about 4 large) mashed bananas
  • 3 cusp flour
  • 1 12 cup (9 oz.) semi­sweet choco­late mini chips
  • 34 cup chopped wal­nuts

Heat oven to 350 °. Coat inside of 5 mini loaf pans with non­stick spray.

Beat but­ter, sug­ar, bak­ing pow­der, bak­ing soda, and salt in a large bowl with a mix­er on medi­um speed. Add eggs one at a time, beat­ing until just blend­ed. Best in bananas. Reduce speed, grad­u­al­ly add flour, beat­ing until just blend­ed. Stir in chips and nuts. Divide even­ly among pans.

Bake 45–55 min­utes or until done. Cool com­plete­ly on wire racks.
