If you give a frog a blueberry, you won’t be able to make these muffins.
- 2 bananas, peeled
- 2 eggs
- 1 cup brown sugar
- 1⁄2 cup butter, melted
- 1 cup blueberries
- 1 tsp. vanilla
- 2 1⁄4 cup flour
- 2 tsp. baking powder
- 1⁄2 tsp. ground cinnamon
- 1⁄2 tsp. salt
Preheat oven to 350°.
Purée bananas in blender (about 1 cup).
In a medium bowl, combine bananas, eggs, sugar, and butter until well blended.
Stir in blueberries and vanilla.
In a large bowl, combine flour, baking powder, cinnamon, and salt.
Stir banana mixture into flour mixture until evenly moistened. Spoon batter into well greased tins.
Bake at 350° for 25–30 minutes or until done. Serve warm.
Makes 12 muffins.
