Banana Blueberry Muffins

If you give a frog a blue­ber­ry, you won’t be able to make these muffins.

  • Ingre­di­ents:
  • 2 bananas, peeled
  • 2 eggs
  • 1 cup brown sug­ar
  • 12 cup but­ter, melt­ed
  • 1 cup blue­ber­ries
  • 1 tsp. vanil­la
  • 2 14 cup flour
  • 2 tsp. bak­ing pow­der
  • 12 tsp. ground cin­na­mon
  • 12 tsp. salt

Pre­heat oven to 350°.

Purée bananas in blender (about 1 cup).

In a medi­um bowl, com­bine bananas, eggs, sug­ar, and but­ter until well blend­ed.

Stir in blue­ber­ries and vanil­la.

In a large bowl, com­bine flour, bak­ing pow­der, cin­na­mon, and salt.

Stir banana mix­ture into flour mix­ture until even­ly moist­ened. Spoon bat­ter into well greased tins.

Bake at 350° for 25–30 min­utes or until done. Serve warm.

Makes 12 muffins.
