Up North Roasted Potatoes

Don’t wor­ry; this is not a pou­tine recipe.

  • Ingre­di­ents:
  • 4 cups cubed red pota­toes
  • 1 cup onion, chopped rough­ly
  • 2 tbsp. North­woods sea­son­ing (avail­able from Pen­zey’s)
  • 2 tbsp. veg­etable oil

Pre­heat oven to 375°. Coarse­ly chop onion and place in a bowl. Leav­ing skins on, cut pota­toes and mix with onions. Toss pota­toes with sea­son­ing until well-coat­ed, then toss with oil.

Pour into a 13×9 inch pan and place into the oven.

Stir pota­toes every 10 min­utes for 30 min­utes then bake inter­rupt­ed for about 30–40 min­utes, until brown.
