Pacific Rim BBQ Sauce

You mean all that city-stomp­ing was over a BBQ sauce?

  • Ingre­di­ents:
  • 2 cloves gar­lic, minced
  • 1 tsp. grat­ed fresh gin­ger
  • 2 tsp. veg­etable oil
  • 12 cup packed brown sug­ar
  • 12 cup whiskey
  • 14 cup hoisin sauce
  • 14 cup soy sauce
  • 14 cup frozen pineap­ple juice con­cen­trate
  • 14 cup rice vine­gar

In a medi­um saucepan, cook and stir gar­lic and gin­ger in hot oil over medi­um heat for 1 minute. Stir in brown sug­ar, whiskey, hoisin sauce, soy sauce, pineap­ple juice con­cen­trate, and vine­gar. Bring to boil­ing and reduce heat. Sim­mer, uncov­ered, for 25–30 min­utes or until mix­ture reduces to 1 cup, stir­ring occa­sion­al­ly.

Brush sauce on beef, pork or chick­en as it grills

Makes about 1 cup.
