Pepe Le Pew would have had much better luck with all those cats if he’d had this recipe.
- 1 tbsp. red wine vinegar
- Salt to taste (about 1⁄4 tsp.)
- 1 tbsp. finely chopped onion or shallot.
- 3 tbsp. olive oil
- 1–2 tsp. Dijon mustard
Whisk everything together except the olive oil and Dijon mustard.
Drizzle in the olive oil and Dijon mustard, whisking like your life depends on it, until you can stick your finger in the dressing, lick it off and say “Yum.”
A classic dressing, this also tastes great on roasted vegetables and sandwiches.
