Roasted Garlic Balsamic Vinaigrette

Look, it’s sim­ple: You can get some good bal­sam­ic, or you can send your kids to col­lege.

  • Ingre­di­ents:
  • 3–4 fresh gar­lic cloves
  • 8 tbsp. olive oil
  • 8 tsp. bal­sam­ic vine­gar

Pre­heat oven to 325°.

Cut the gar­lic cloves into three or four slices each.

Com­bine the gar­lic and olive oil in a small oven-proof dish and roast at 325° until gar­lic is soft and brown, and the oil is infused with the gar­lic fla­vor.

Let cool. Whisk 8 tsp. bal­sam­ic vine­gar into the gar­lic and oil mix.

Deli­cious on spinach sal­ad or as a mari­nade for chick­en breasts or skirt steak.
