  • The Ham:
  • 6–8 lb. ham, bone in
  • 2–3 cans Coke (enough to cov­er the bot­tom of the roast­ing pan, but not touch the ham)
  • The Glaze:
  • 2 cans Coke
  • 34 cup dark brown sugar
  • 14 cup yel­low mustard
  • 14 cup lime juice
  • 2 tbsp. dark rum
  • 1 tbsp. dry mustard
  • Pinch of salt

Pre­heat oven to 325°. 

Bake ham on roast­ing rack with 2 cans of Coke, tent­ed under foil (don’t touch ham) for 1 hour.  Mean­while make glaze.

Reduce 2 cans Coke for glaze to 12 cup over medi­um heat, about 40 min­utes.  Whisk in remain­ing ingre­di­ents and allow to sim­mer and dissolve.

After bak­ing ham for 1 hour, uncov­er it and begin glaz­ing ham, brush­ing every 15 min­utes dur­ing the last hour of bak­ing.  (Check to make sure there is still Coke in the bot­tom of the roast­ing pan; if need­ed add some). 

Remove from heat once ham is 110°. Allow to rest 15 min­utes then carve and serve warm.
