Being mashed up for banana bread was his finest moment.
- Ingredients:
- 1⁄2 cup butter, softened
- 1 cup sugar
- 1 large egg
- 1 tsp. vanilla extract
- 1 cup mashed ripe bananas (about 3 bananas)
- 3 tbsp. milk
- 2 cups flour
- 1 tsp. baking powder
- 1⁄2 tsp. baking soda
- 1 cup semisweet chocolate chips
- 1⁄2 cup pecans, chopped
Preheat oven to 350°.
In a large bowl, cream together butter and sugar.
Add egg and vanilla; mix until fluffy. Set aside.
In small bowl, mix bananas and milk; set aside.
In another bowl, mix flour, baking powder and baking soda. Add dry ingredients alternately with banana/milk mixture to creamed butter mixture, beating until blended.
Stir in chips and pecans by hand.
Spoon batter into greased and floured loaf pan.
Bake at 350° for about 1 hour, or until knife inserted in center comes out clean. Avoid overbaking so the bread doesn’t get dry.
Cool in pan 10 minutes, take out of pan and cool completely on rack.
Optional:
Instead of chocolate chips and pecans, you can try almonds, almond extract or white chocolate chips.
