Aunt Joyce’s Oatmeal Cookies

Don’t wor­ry: No raisins in this recipe to abuse your trust.

  • Ingre­di­ents:
  • 1 cup short­en­ing
  • 1 cup brown sug­ar
  • 1 cup sug­ar
  • 2 eggs, beat­en
  • 1 tsp. vanil­la
  • 1 12 cup flour
  • 1 tsp. salt
  • 1 tsp. bak­ing soda
  • 3 cups oats
  • OPTIONAL: 12 cup chopped nuts

Pre­heat oven to 350°.

Cream short­en­ing and sug­ar; add eggs and vanil­la and beat until fluffy.

Sift in dry ingre­di­ents a lit­tle bit at a time; mix well.

Add the oats a lit­tle at a time and mix well yet again. If you opt­ed in for the nuts, stir them in by hand.

Place about 1 12 inch­es apart on a light­ly greased cook­ie sheet by spoon­fuls, or roll the dough into a log cut into 1/4‑inch slices.

Bake at 350° for 15 min­utes.
