French Vinaigrette Dressing

Pepe Le Pew would have had much bet­ter luck with all those cats if he’d had this recipe.

  • Ingre­di­ents:
  • 1 tbsp. red wine vinegar
  • Salt to taste (about 14 tsp.)
  • 1 tbsp. fine­ly chopped onion or shallot.
  • 3 tbsp. olive oil
  • 1–2 tsp. Dijon mustard

Whisk every­thing togeth­er except the olive oil and Dijon mustard.

Driz­zle in the olive oil and Dijon mus­tard, whisk­ing like your life depends on it, until you can stick your fin­ger in the dress­ing, lick it off and say “Yum.”

A clas­sic dress­ing, this also tastes great on roast­ed veg­eta­bles and sandwiches.
