Banana Chocolate Chip Pecan Bread

Being mashed up for banana bread was his finest moment.

  • Ingre­di­ents:
  • 12 cup but­ter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 tsp. vanil­la extract
  • 1 cup mashed ripe bananas (about 3 bananas)
  • 3 tbsp. milk
  • 2 cups flour
  • 1 tsp. bak­ing powder
  • 12 tsp. bak­ing soda
  • 1 cup semi­sweet choco­late chips
  • 12 cup pecans, chopped

Pre­heat oven to 350°.

In a large bowl, cream togeth­er but­ter and sugar.

Add egg and vanil­la; mix until fluffy. Set aside.

In small bowl, mix bananas and milk; set aside.

In anoth­er bowl, mix flour, bak­ing pow­der and bak­ing soda. Add dry ingre­di­ents alter­nate­ly with banana/milk mix­ture to creamed but­ter mix­ture, beat­ing until blended.

Stir in chips and pecans by hand.

Spoon bat­ter into greased and floured loaf pan.

Bake at 350° for about 1 hour, or until knife insert­ed in cen­ter comes out clean. Avoid over­bak­ing so the bread doesn’t get dry.

Cool in pan 10 min­utes, take out of pan and cool com­plete­ly on rack.

Optional:

Instead of choco­late chips and pecans, you can try almonds, almond extract or white choco­late chips.
